Directions
- Preheat oven to 400°F (200°C).
- Brown the ground beef in a skillet over medium heat. Drain excess fat.
- Add taco seasoning and water. Simmer for 3–4 minutes until thickened.
- Spread half of the tortilla chips on a large baking sheet or oven-safe platter.
- Top with half of the beef, beans, corn, and cheeses.
- Add the remaining chips and repeat the layers.
- Bake for 8–10 minutes, or until the cheese is fully melted and bubbly.
- Remove from the oven and immediately top with diced tomatoes, red onion, jalapeños, olives, and cilantro.
- Finish with dollops of sour cream and guacamole
- Serve with salsa and lime wedges.
