- 1 Lb Ground Beef (or Ground Turkey) - Cooked

- 1 Can Black Bean
- 1 Cup Corn
- 1 Cup Salsa - Recipe below
- 2 Avacado - Diced
- 1 1/2 Cups Cheddar Cheese - Shredded
- 1 Packet Taco Seasoning
- 1 Tbsp Cilantro leaf - Chopped
- 1 Lime - Wedged
- 1 Cup Fresh Tomato Salsa
- 2 Tbsp Taco Seasoning
- 2 Cups Mexican Rice

- Cook the ground beef or turkey in a large skillet over medium heat until browned. Drain any excess grease.
- Stir in the taco seasoning with a few tablespoons of water and simmer for 2–3 minutes.
- Warm the Mexican rice, black beans, and corn separately.
- Top with the seasoned meat, black beans, corn, shredded cheddar cheese, and salsa.
- Store diced avocado separately or add it just before serving to keep it fresh.
- Refrigerate for up to 4 days.
Meal Prep Tips:
- Reheat the bowl (without the avocado) for 1½–2 minutes in the microwave.
- Add the avocado after heating.
- Garnish with fresh cilantro and a squeeze of lime for extra flavor.
