- Preheat oven to 350°F (175°C).
- Combine the rolled oats, flour, brown sugar, baking powder and salt.
- Cut or rub in the butter/shortening until the mixture is coarse and crumbly.
- Gradually mix in the cold water until the dough holds together.
- Roll the dough on a lightly floured surface to about ¼ inch thick.
- Cut into squares, rectangles or triangles. Square/rectangular oatcakes are particularly characteristic of the Cape Breton style.
- Place on a parchment-lined baking sheet.
- Bake for about 12–15 minutes, until lightly golden around the edges.
- Cool completely—they'll become crisper as they cool.
