- 1/2 Cup Butter
- 1 Lb Mushrooms - Sliced
- 1/2 Cup Onion - Chopped
- 1/2 Cup Parsley - Minced
- 1 Cup Celery - Chopped
- 3 Cups Brown Rice - Cooked
- 1 - Salt - To Taste
- 1 - Black Pepper - To Taste
- 4 - Cornish Hen

- Melt butter in heavy skillet; add mushrooms.
- Cook mushrooms for 5 minutes; remove from skillet.
- Stir onions, parsley and celery into remaining butter in skillet.
- Cook, stirring frequently, until onions are golden; stir in rice, mushrooms, 1 teaspoon salt and 1/8 teaspoon pepper; remove from heat.
- Stuff hens with rice mixture; truss.
- Rub outside of hens with additional salt and pepper.
- Arrange hens in shallow roasting pan.
- Bake at 325 degrees for 15 minutes per pound; allow 30 to 40 minutes longer when stuffed.
- Baste with pan drippings every 30 minutes.
One 8-ounce can sliced mushrooms may be substituted for fresh mushrooms.
