A good stir fry is fast, forgiving, and endlessly adaptable, and this one tosses tender strips of beef or chicken with crisp green peppers and mushrooms in a savory soy sauce. Everything cooks in minutes over high heat, keeping the vegetables snappy and bright. Pile it over rice or chow mein noodles for a takeout-style dinner you can have on the table before delivery would even arrive.
