Thick Greek yogurt is loaded with grated cucumber, fresh garlic, lemon, and dill, with the secret being to squeeze every drop of moisture from the cucumber first so the dip stays luscious rather than watery. Chill it, then use it as a dip, a sauce for grilled meat, or a spread for warm pita.

- 1/2 Large Cucumber
- 2 Cloves Garlic
- 1 Tbsp Lemon Juice
- 1 Tbsp Olive Oil
- 1 Tbsp Dill Weed

- Grate the cucumber and squeeze out as much of the moisture as possible using a clean kitchen towel or paper towels.
- In a medium bowl, combine the Greek yogurt, cucumber, garlic, lemon juice, olive oil, dill, salt, and pepper.
- Stir until well combined.
- Cover and refrigerate for at least 30 mins to allow the flavors to develop.
- Before serving, drizzle with a little olive oil and garnish with fresh dill.
