- Thinly slice the celery and dice the apple and cucumber.
- chop the fresh coriander and walnuts.
- Add all salad ingredients to a large bowl.
- In a small jar or bowl, whisk together honey, olive oil, orange juice, lemon juice, salt and pepper.
- Pour the dressing over the salad and toss gently until everything is evenly coated.
- chill for 15-20 minutes before serving for the freshest flavor.
