- Mix sherry, wine, lemon juice and salt.
- Pour over ducks; marinate in refrigerator for 24 hours.
- Drain ducks; stuff with apples, celery and onion.
- Place in roasting pan.
- Roast, uncovered, at 400 degrees for 30 minutes; cover.
- Reduce temperature to 350 degrees; roast for 1 hour and 30 minutes to 2 hours longer.
- Remove apples, celery and onions; discard.
- This mixture is used to take away wild taste of ducks.
