- 1/2 Cup Margarine
- 1 Cup All-Purpose Flour
- 4 - Egg
- 2 Cups Chicken - Chopped
- 1 Cup Celery (or Apple) - Chopped
- 2 Tsp Lemon Juice
- 1/2 Tsp Salt
- 1/8 Tsp Black Pepper
- 1/2 Cup Mayonnaise
- 2 - Hard-Cooked Eggs - Chopped
- 1 Tbsp Onion - Minced

Directions
- Preheat oven to 400 degrees.
- Bring margarine and 1 cup water to rolling boil in small saucepan; stir in flour all at once.
- Stir for 1 minute or until mixture forms ball and leaves side of pan; remove from heat.
- Beat in eggs, one at a time, beating until mixture is smooth.
- Drop dough by slightly rounded teaspoonfuls onto ungreased baking sheets.
- Bake for 25 minutes or until golden brown.
- Cool away from draft.
- Combine chicken, celery, lemon juice, salt, pepper, mayonnaise, eggs and onion; toss lightly.
- Slit puffs on 1 side; remove soft filling.
- Fill puffs with chicken mixture.
- Unfilled puffs may be frozen in airtight containers.
