- Preheat your oven to 425 F.
- Line a large baking sheet with parchment paper.
- Place the sliced peppers and onions on the baking sheet.
- Drizzle with olive oil and sprinkle with Italian seasoning. Toss to coat.
- Nestle the sausage links among the vegetables.
- Bake for 25-30 minutes, turning the sausages halfway through cooking, until the vegetables are tender and slightly caramelized and the sausage is cooked fully through (internal temperature of 160 F).
- Serve as is, over rice, in a bun, or with crusty bread.
