- 1 1/2 Cups Mozzarella Cheese (or Monterrey Jack Cheese) - Shredded
- 1/2 Cup Red Pepper - Diced
- 1/2 Cup Green Pepper - Diced
- 1/4 Cup Onion - Diced
- 1 Tbsp Worcestershire Sauce
- 1 Tsp Garlic Powder
- 1 Tsp Paprika
- 1/2 Tsp Onion Powder
- 3-4 Tortillas

- Add the ground beef, shredded cheese, red pepper, green pepper, onion, Worcestershire sauce, garlic powder, smoked paprika, onion powder, salt and pepper to a large bowl.
- Using clean hands, gently mix everything together until the cheese, vegetables and seasonings are evenly incorporated throughout the ground beef.
- Lay one tortilla flat and spread a thin, even layer of the beef mixture over the entire surface, taking the mixture almost completely to the edges. Avoid making the meat layer too thick so it cooks through evenly.
- Starting at one end, tightly roll the tortilla into a firm log, keeping the beef mixture tucked inside as you roll.
- Repeat with the remaining tortillas and beef mixture.
- Place the rolls in the refrigerator for 20–30 minutes to firm them up and make them easier to slice.
- Using a very sharp knife, cut each roll into approximately 1-inch-thick pinwheels.
- Thread 3–4 pinwheels onto each double-pronged metal skewer, making sure both prongs pass securely through the pinwheels.
- Preheat the Blackstone over medium to medium-low heat and lightly oil the griddle.
- Place the skewers flat on the hot griddle and cook slowly for approximately 5–7 minutes per side, turning several times so the tortilla doesn’t burn before the beef is cooked.
- Continue cooking until the outside is golden and crispy, the cheese is melted and the ground beef in the centre reaches 160°F (71°C).
- Combine the melted butter, garlic and parsley. During the final minute of cooking, lightly brush the pinwheels with the garlic butter.
- Remove the skewers from the Blackstone and allow them to rest for 3–5 minutes before serving.
