- 1 - Black Pepper - To Taste
- 1 Cup Vinegar
- 1 Small Onion - Chopped

- Rub cavity of chicken with salt and pepper.
- Place chicken on rack in 3-quart roasting pan, breast side up; sprinkle with salt and pepper.
- Add vinegar, 2 cups water and onion.
- Roast, covered, at 325 degrees for 2 hours or until thermometer registers 180 degrees.
- Stick fork or skewer into thick part of thigh; chicken is done if fork turns easily.
- Remove chicken from pan.
- Dilute juices in pan with 1 cup boiling water.
- Skim off fat; reserve.
- Measure stock.
- Use 1 1/2 tablespoons reserved fat and 1 1/2 tablespoons flour for each cup of stock.
- Mix flour and fat; cook over low heat until smooth.
- Add stock; bring to a boil, stirring constantly.
- Boil for 1 minute; add salt and pepper.
Serve with rice or noodles.
