- Wash and peel the potatoes, if desired. Cut into thick fries, approximately ½ inch wide.
- Place the potatoes in a large bowl of cold water and soak for 30 minutes to remove excess starch. Drain and thoroughly pat dry.
- Heat vegetable oil in a deep fryer or heavy-bottomed pot to 325°F (165°C).
- Working in batches, fry the potatoes for approximately 5–6 minutes until tender but still pale. Remove and transfer to a wire rack.
- Allow the fries to rest for 10 minutes while increasing the oil temperature to 375°F (190°C).
- Return the fries to the hot oil and fry for another 3–5 minutes until golden brown and beautifully crispy.
- Meanwhile, melt butter in a small saucepan over low heat. Add minced garlic and cook for approximately 1 minute until fragrant, being careful not to brown it.
- Transfer the hot fries to a large mixing bowl. Drizzle with garlic butter and gently toss to coat.
- Immediately sprinkle with freshly grated Parmesan, chopped parsley, sea salt, and black pepper. Toss until evenly coated.
- Prepare the garlic Parmesan aioli by whisking together mayonnaise, Parmesan, minced garlic, lemon juice, and Dijon mustard. Season with salt and pepper.
- Pile the fries into traditional cardboard food boats or paper cones. Finish with additional Parmesan and parsley.
- Serve immediately with garlic Parmesan aioli drizzled over the top or alongside for dipping.
