- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly dust it with flour.
- In a large bowl, whisk together the flour, baking soda and salt.
- Pour in the buttermilk and stir with a wooden spoon until a rough, shaggy dough forms.
- Turn onto a lightly floured surface and gently knead 8–10 times, just until the dough comes together. Don't overwork it.
- Shape into a rustic round loaf about 2 inches thick and place on the prepared baking sheet.
- Using a sharp knife, cut a deep X across the top, approximately ½ inch deep.
- Bake for 35–45 minutes, until deeply golden and the loaf sounds hollow when tapped on the bottom.
- Transfer to a wire rack and cool for at least 20 minutes before slicing.
