- 2 - Chicken Breasts
- 5 Tbsp Butter
- 3 Tbsp Sherry
- 1 Clove Garlic - Crushed
- 1/2 Cup Blanched Almonds
- 1 Large Mushrooms - Finely Chopped
- 1 Tsp Arrowroot (or Potato Starch)
- 1/2 Cup White Wine
- 1/2 Cup Chicken Stock
- 1 - Salt - To Taste
- 1 - Black Pepper - To Taste

- Halve chicken breasts; remove skin and bones.
- Melt 4 tablespoons butter in skillet.
- Add chicken; cook over low heat until brown on both sides.
- Heat sherry; ignite.
- Pour over chicken; remove chicken breasts to plate.
- Add remaining butter, garlic, 1/4 cup almonds and mushroom to skillet; cook, stirring frequently, for several minutes or until golden brown.
- Blend in arrowroot until smooth; stir in wine and chicken stock.
- Cook over low heat, stirring constantly, until thickened; season with salt and pepper.
- Return chicken breasts to skillet.
- Cook over low heat for 20 minutes or until tender when tested with fork.
- Arrange chicken breasts on heated serving platter; pour sauce over chicken.
- Sprinkle with remaining almonds.
