- 2 Tbsp Oil
- 1/2 Tsp Salt
- 1/8 Tsp Black Pepper
- 2 Cups Chicken Breasts - Cooked or Sliced
- 4 Tbsp Cornstarch
- 4 Tbsp Soya Sauce
- 2 Cups Chicken Broth
- 3 or 4 - Tomato - Wedged

- Cut green peppers into strips.
- Heat oil in wok or electric skillet; saute green pepper strips lightly over medium heat.
- Add salt, pepper and chicken strips.
- Dissolve cornstarch in soy sauce and 1/2 cup broth.
- Add remaining broth to chicken mixture; bring to boiling point over high heat.
- Blend in cornstarch mixture, stirring constantly, until sauce thickens.
- Reduce heat to low; add tomatoes.
- Cook for 5 minutes.
- Serve over steamed rice or heated chow mein noodles.
