They stay pillowy for days and come together with pantry staples. Swap in white or butterscotch chips when you want to mix things up. - 2 Cups Pumpkin
- 8 Tbsp Margarine
- 1/2 Cup Brown Sugar
- 1/2 Cup White Sugar
- 1 - Egg
- 1 Tsp Vanilla
- 1 Cup Chocolate Chips
- 2 Cups All-Purpose Flour
- 1/2 Tsp Salt
- 1 Tsp Baking Soda
- 1 Tsp Baking Powder
- 1 Tsp Pumpkin Pie Spice

- Combine margarine, white and brown sugar in a large bowl - Beat with an electric mixer until light and fluffy.
- Mix in the pumpkin and egg.
- Add the dry ingredients that have been mixed together in a separate bowl mixing all together well.
- Stir in the vanilla.
- Fold in the chocolate chips.
- Drop the dough by teaspoon unto a cookie sheet.
- Bake in a preheated oven of 375 degrees for approximately 12 minutes or until golden brown.
- Let sit on cookie sheet for a couple of minutes, then remove to wire rack to cool completely.
- Makes 4 to 5 dozen.
- For variety you can substitute the chocolate chips for white or butterscotch chips.
