- 2 Tbsp Olive Oil
- 4 Cloves Garlic - Minced
- 1 Tbsp Rosemary - Chopped
- 1 Tbsp Thyme
- 1 1/2 Tsp Salt
- 1 Tsp Black Pepper
- 1 Tbsp Dijon Mustard

- Remove the beef from the refrigerator about 45–60 minutes before roasting. Pat it thoroughly dry.
- Preheat the oven to 450°F (230°C).
- Mix the olive oil, garlic, rosemary, thyme, salt, pepper and Dijon. Rub all over the roast.
- Roast at 450°F for 15 minutes to develop a nicely browned exterior.
- Reduce the oven to 325°F (165°C) and continue roasting until the centre reaches approximately: 125–130°F for medium-rare / 135–140°F for medium / 145°F+ for medium-well.
- A 3–4 lb roast will generally need another 50–80 minutes, but use the internal temperature rather than the clock.
- Transfer the roast to a cutting board, loosely tent with foil and rest for 20–30 minutes before slicing.
