- Caramelize the onion by melting the butter in a skillet over medium-low heat. Add the onions and cook, stirring occasionally, for 20–25 minutes until deeply golden and sweet.
- Divide the ground beef into 8 loosely packed balls (about 4 ounces each). Don't compress them tightly.
- Butter the cut sides of the brioche buns and toast until golden.
- Heat a cast-iron skillet or flat-top griddle (Blackstone) over high heat until very hot.
- Place two beef balls on the hot surface. Immediately press each one into a thin patty using a sturdy spatula or burger press with a piece of parchment paper between the meat and the press.
- Season generously with salt and pepper.
- Cook for 2 minutes until the edges become dark brown and crispy.
- Flip, immediately top with a slice of cheddar, and cook 30–60 seconds more.
- Spread smash sauce on both halves of each toasted bun.
