- 4 Cups Corn
- 2 Tbsp Butter
- 1/4 Cup Mayonnaise
- 1/4 Cup Sour Cream
- 1/2 Tsp Garlic Powder
- 1/2 Tsp Chili Powder
- 1/4 Tsp Mild Smoked Spanish Paprika
- 1 Tbsp Lime Juice - Fresh Squeezed
- 1/4 Cup Cotija Cheese (or Feta Cheese)
- 2 Tbsp Cilantro leaf - Chopped
- 1/4 Tsp Salt - To Taste
- 1/4 Tsp Black Pepper - To Taste

- Heat a large skillet over medium-high heat. Melt the butter and cook the corn for 6-8 minutes, stirring occasionally, until lightly charred in spots.
- In a separate bowl, whisk together the mayonnaise, sour cream, garlic powder, chili powder, smoked paprika, lime juice, salt and pepper.
- Add the warm corn to the sauce and stir until every kernel is evenly coated.
- Fold in most of the cotija (feta) cheese and chopped cilantro, reserving a little for garnish.
- Spoon the mixture into clear plastic cups, filling each about 3/4 full so there is still room for the toppings.
- Finish with extra cotija (feta) cheese, a dusting of chili power or Tajin, fresh cilantro, and a lime wedge on the rim.
- Serve immediately with a spoon and optional hot sauce for extra heat.
