Warm, melting Brie takes on smoky depth when finished on the grill, and this marinated version is a showpiece. A zesty bath of lemon, roasted red pepper, garlic, and Dijon soaks into the cheese for hours before a quick turn over the coals leaves the center soft and oozing. Serve it warm with French bread and let everyone dig into the gooey middle.
