Cut fish into 2 inch pieces, and arrange in a well buttered dish. Melt one oz butter in a saucepan.
Peel and
chop the onion, crush the garlic finely. Add to the hot butter and
fry until onion is soft. Finely
chop and add the tomatoes, green pepper. Salt and pepper to taste, sugar and herbs. Cover pan with lid and
simmer gently for fifteen minutes. Pour the vegetable
mixture over fish.
Melt one oz butter in a saucepan, and draw off heat. Add the
breadcrumbs and, using a fork, toss them in the butter to
coat. Add
grated cheese and sprinkle this
mixture over the vegetables. Place in center of a hot oven 400 F and
bake for half an hour, or until fish is tender and topping crisp. Can be made and reheated.
