Combine margarine, white and brown sugar in a large bowl. Beat with an electric mixer until light and fluffy. Mix in the pumpkin and egg. Add the dry ingredients that have been mixed together in a separate bowl mixing all together well. Stir in the vanilla. Fold in the chocolate chips.
Drop the dough by teaspoon unto a cookie sheet.
Bake in a preheated oven of 375 degrees for approximately 12 minutes or until golden brown.
Let sit on cookie sheet for a couple of minutes, then remove to wire rack to cool completely. Makes 4 to 5 dozen.
For variety you can substitute the chocolate chips for white or butterscotch chips.
