Beat eggs with sugar and oil. Add the
shredded and drained zucchini (
cream mixture). Sift together 3 cups flour with baking powder, baking soda, salt and cinnamon. Add to
cream mixture. Add vanilla and
mix thoroughly. Add remaining flour to coconut and nuts.
Stir to
coat.
Add to
mixture and
mix thoroughly. Pour into 2 greased loaf pans.
Bake at 325 F. for 1 hr. or until done.
Cool 10 min. in pan and remove.
