Mash one cup of bananas. Cream and blend the margarine, sugar, eggs, bananas and grated orange rind.
Add the flour, baking soda and salt. Mix thoroughly. Add milk, vanilla, almond extract, coconut and chopped walnuts. Mix thoroughly and pour into a loaf pan. Bake at 350 degrees for 60 to 70 minutes or until a toothpick comes out clean.
