Preheat the oven to 350F (175C). Line baking sheets with parchment paper.
Using an electric
mixer or a wooden spoon,
cream the butter and sugar until light.
Beat in the eggs one at a time, along with the vanilla. Combine the flour, baking soda, baking powder, salt and oats in a separate bowl. Add to the butter
mixture and beat thoroughly.
Fold in the granola, raisins, chocolate chips and walnuts. The
mixture will be very stiff. Drop the cookie dough portions on the pre
pared pans. Press slightly; the
mixture will spread.
Bake for about 12 -15 minutes, or until set but still soft.
Cool for at least 2 minutes before removing to a wire rack to cool completely.
