Preheat oven to 350 F. Grease and flour two 9 inch round cake pans or one 13 inch by 9 inch baking pan. Into large bowl, measure all ingredients; with
mixer at low speed, beat until well
mixed, constantly scraping bowl with rubber spatula.
Beat at medium speed 4 minutes, occasionally scraping bowl. Pour batter into pans and bake round layers 30-35 minutes, or 40-45 minutes, until toothpick inserted in center comes out clean.
Cool cake in pans on wire racks 10 minutes; remove from pans and cool completely on wire racks. makes 2 layers ore 1 cake.
Cupcakes: Preheat oven to 350 F. Place paper liners in d dozen 3 inch muffin pan cups, or grease and flour cups. Pre
pare batter as above but pour it into cups, filling each half full.
Bake 20 minutes or until toothpick inserted in center of one comes out clean.
Cool in pans on wire racks 10 minutes; remove from pans and cool completely on wire racks. Makes 2 dozen.
