Preheat oven to 350 F. Grease and flour two 9-inch round cake pans. Into a large bowl, measure all ingredients; with
mixer at low speed, beat until well
mixed, constantly scraping bowl with rubber spatula.
Beat at high speed for 5 minutes, occasionally scraping bowl. Pour batter into pans and bake 30 to 35 minutes until toothpick inserted in center comes out clean.
Cool layers in pans on wire racks 10 minute; remove from pans and cool completely on wire racks. Makes 2 layers.
Cupcakes: Preheat oven to 350 F. Place paper liners in 2 dozen 3 inch muffin-pan cups, or grease and flour cups. Pre
pare cake batter as above but pour into cups, filling each half full.
Bake 20 minutes or until toothpick inserted in center of one comes out clean.
Cool in pans on wire racks 10 minutes; remove from pans and cool completely on wire racks. Makes 2 dozen
